When you are running a food business, such as a restaurant, or a hospitality business, perhaps a hotel or a pub, it’s always go go go. There are a lot of moving parts in both, different expectations from a very diverse group of stakeholders that must be met.

These stakeholders are not just the business owners. They are yur Brisbane neighbours. The regulators. The customers. The employees. And even the contractors.

And the expectations might be equally diverse. The owners might want profit and minimal complications. The neighbours – well they would likely want peace and quiet. Or at least a minimum of issues. The regulators want their license fees paid and for the business to be legally compliant with all laws and regulations. The employees want to be paid, and want to have a safe and relatively pleasant working environment. The contractors to, have similar expectations, in all probability.

And somewhere in the middle of all this is a manager, in Brisbane, working a juggling act trying to meet all of these.

A great question that gets asked all too often is what areas often need more attention.

Lets start with this answer and first look at the kitchen area. This is a space that needs to be clean, compliant, and serviced correctly. If that doesn’t happen, we risk food contamination, insect infestation, plumbing issues, odour, vermin, all kinds of problems.

But how to avoid these?

One of the most common causes of unpleasant odours in kitchens isn’t actually bad cooking. It often comes from the plumbing, when it is in need of maintenance or cleaning.

And the most likely culprit is usually the grease trap. You see, when a grease trap isn’t serviced, it fills up with fat. It can block and overflow. And when the fat is left too long it goes rancid. Hence the smell.

Getting a regular grease trap pump out can lower the risk of all of these occurring. So although there is a small cost associated, if its not done, the cost of a clean up is often far higher.

One of the next most common causes of issues in food premises is insect infestation and vermin, such as rats and mice. We think everyone has heard a story where someone saw a rat in a kitchen, or the dreaded cockroaches in food. Remember the movie Ratatouille  - a movie about a rat, in a kitchen. Chaos. Great movie though.

Again, a situation that is totally preventable. A good manager will ensure that a competent qualified company undertakes pest control services on a regular basis. These might include spot treatments for cockroaches, spider treatments, flying insect control, as well as ground based rodent pest management – mouse baits, rat baits in non openable lockable bait stations.

We should point out that there are rodent bait stations that are made of cardboard, but these can be opened and the poison bait exposed. These are no longer able to be used.

The final item we are going to discuss in this post is waste management. Often when people think waste management, they are thinking bins. In reality, the bins are only a part of it. These need to be emptied, reliably, and safely, by a company that can be trusted and is compliant with all of the relevant waste regulations. Sound simple? You might think all waste companies are the same. If that was the case, however they would all have reviews at the same level on the various review sites. And is that the case? Not yet.
